#66: The Return of the Ribbon

I just can’t stay away from you vegetable peeler! Not when you make these beautiful strands that are just the thickness and texture in my salad. I can’t seem to quit these garbanzos either! It has been a fun challenge to try and do something new with them everyday. So far, I have liked all the combos! But I will be happy to give this topping a break for a bit.


a fistful of arugula
long drizzle of Brianna’s Real French Vingairette
1 small zucchini, shaved into ribbons with a vegetable peeler
1/2 cup or so garbanzo beans
1/4 cup crumbled feta
a sprinkle of flax seeds

  • Toss greens in dressing and pile on place. Make a next of zucchini ribbons to cradle your garbanzo beans and cheese. Top with flax seeds.
