Zucchini, Carrots, & Olives

#43: No cutting required

This one could be good for a kiddo who likes to help in the kitchen! The zucchini was shaved with a vegetable peeler and the carrots grated on a basic box grater—Olives are pre-cut!

a fistful of arugula
long drizzle of Brianna’s Real French Vinaigrette
1 medium zucchini
1 very small carrot (I used a half a carrot here, actually)
large spoonful Kalamata olives

  • In a large bowl, toss greens in dressing and move to plate. In the same bowl, shave in ribbons of squash using a vegetable peeler (reserve the core for another salad!) Top with olives.
