Tuna, Potatoes, & Kalamata Olives

Everything about this salad is great! Its so filling and bright—Make it a true Salad Niçoise in the summer months by adding some green beans and cherry tomatoes when they are in season. Definitely needs a hard-boiled egg too!

#5: A satisfying, simple salad

a fistful baby arugula
dash of Briannas Real French Vinaigarette
1/3 cup roasted potatoes (organic fingerling pictured here!)1/4 cup chopped Kalamata olives
1/2 5 oz can tuna in water (in oil would be good too!)
1/4 kalamata olives

  • Toss arugula with dressing and top with roasted potatoes, tuna, and olives
