Tomato, Tabouleh, & Hummus

#63: I don’t really like tomatoes

But since my mama insisted I take this one home, and we all know how to I hate to waste things, and it was one of this really big, pretty, funky heirloom ones… I decided to make an exception. Great addition to my tabouleh and hummus salad starters I picked up from Phoenicia Bakery and Deli the other day. I can’t say this converted me to a tomato lover or anything, but it wasn’t half bad!

a fistful of arugula
long drizzle of Brianna’s Real French Vinaigrette
1 fresh tomato, thinly sliced
1-2 tablespoons of tabouleh
1 heaping tablespoon of hummus

  • Arrange tomato slices on top of a bed of greens tossed in dressing. Plop on tabouleh and hummus. Go!
