Snap Peas, Radishes & Mint

#56: Springtime snap!

a fistful of red & green baby romaine
20–30 snow peas
3 medium radishes
5–10 leaves fresh mint; julienned
a juice of one medium to large lemon

  • In a large bowl, toss greens in the juice of 1/2 a lemon and move to plate. In the same bowl, combine thinly sliced radishes, snow peas, and mint with juice of the other 1/2 lemon. Cover in a large pinch of salt and toss. Pile on top of greens.
