Lentils, Cauliflower, & Cilantro

#8: A lentil love affair

a fistful of baby arugula
big splash red wine vinegar & long drizzle olive oil
1/2 cup lentils roasted with shallots & carrots
3–4 florets crumbled cauliflower
1 super leafy stem of cilantro

  • Mound roasted lentils on top of arugula; top with cauliflower and cilantro. Splash red wine vinegar and drizzle olive oil on top of everything. Dash of salt to finish.
