Roasted Cabbage, Leek, & Carrot

baby spinach
purple cabbage; 1/2 in steak
baby leek; quartered
baby heirloom carrot; halved
high-heat oil (I use non-GMO safflower)

  • Roast cabbage steak, leek, and carrots in oil at 400°F. Toss in lemon juice then pile on top of greens.
