Qunioa, Broccoli, & Dried Fruit


#36: You Never Fail Me (Roasted Broccoli)

a fistful of spinach (if I could go back I might do arugula)
drizzle of Brianna’s Real French Vinaigrette
about a 1/2 cup of leftover roasted broccoli (slightly warmed if that’s to your liking)
1/2 cup cooked quinoa
1/4 dried sweet fruits (craisins and golden raisins shown here)
5–6 walnut halves

  • Put greens on plate and drizzle with dressing. In a medium bowl, toss broccoli, quinoa, and fruit together, then pile on top. Finally, crumble walnuts.
