Tomatoes, Pickled Onions & Sweet Peppers


#113 Marinating, my friends… Marinating

pear tomatoes; quartered
sweet peppers; thinly sliced (these rainbow babies are from JBG organic!)
pickled red onions
lemon-garlic vinaigrette
white chia seeds (superfood sprinkles!)

  • Combine everything but the greens in a small bowl with a lid. Make in the morning and let marinate until lunch time (don’t marinate longer than over night or the tomatoes will start to kind of fall apart).
