Mint, Grapefruit & Avocado


#57: Summer Steamy? Cool & Creamy

Kind of sorry I won’t get to repeat this until next summer—there’s always dinner. I don’t often eat salad for dinner too, but sometimes I just can’t get enough of one of the lunch combos. This is definitely one of those. Would make a great option for a camping trip since both avocados and grapefruits come in their own travel packages. What kind of salad would you like to have on a summer vacation?

long drizzle Brianna’s Real French Vinaigrette
1 medium-large grapefruit; supremed
1 small avocado; chopped
5–7 mint leaves; juilenned

  • Toss greens in dressing and add to plate. Put grapefruit segments into a small bowl. Add mint and toss. Add avocado and gently toss then pile on to greens.
