Peppers, Cabbage, & Carrots

During the summer I pretty much become obsessed with coleslaw of the Asian inspired variety. This combo right here is very forgiving when you need to make things ahead. And as far as I am concerned you can’t fail with a kale and cabbage based slaw at your next bar-b-que.

If you make this, pile your plate high my friends! I enjoyed today’s slaw with an avocado and homemade pickled onions. Carnivorous folks might like it with some pulled pork or it would be great in a taco too! What’s your favorite non-traditional slaw recipe?

#88: A salad that smiles back

serves 4

1 bunch curly kale
1/2 of a small head of purple cabbage, shredded (good filler if you are serving more people)
1/2 large yellow bell pepper, cut into thin slivers
1/2 red sweet pepper, cut into thin slivers
1 jalapeño, finely diced
a big fistful of broccoli stem strings (like this!)
1 large carrot, cut into ribbons with a peeler
1 English cucumber, also cut into ribbons with a peeler
two big pinches of cilantro, finely chopped or cut with kitchen scissors
1-2 T homemade Asian dressing

optional garnish

lime
pickled red onion
avocado
corn tortilla chips
salt if ya needs it
