Cucumber, Red Onion, & Cauliflower

#17: Ribbons & rings

1 medium English or seedless cucumber (reserve the center for another salad!)
2 or so tbs vinegar (red wine used here)
a pinch of sugur
pinch of salt
a small fistful of baby red & green romaine
fresh dill
1 red boiler onion (or about a 1/4″ sliver from a bigger one)
a few florets of cauliflower

  • Make ribbons of by peeling each side down to the core with a vegetable peeler (you could just cut them into half moons too) and set aside in a strainer. Cut onion short ways and pop out into rings. Whisk vinegar, sugar, and salt in a small bowl. Toss greens in half the dressing and move to plate. Transfer cucumber, red onion, and dill to the same bowl and mix with remaining dressing. Pile on to the greens. Top with crumbled cauliflower.
