Egg, Beans & Bacon

For some reason this one feels like the tiniest bit of a cheat! Maybe I’m being too hard on myself, but typically I wouldn’t allow the base of my plate to be something other than lettuce. In my defense there is not a full layer! I kind of made a bean moat around my fragile leaves.


I think the only thing I would change about this one is possibly use a heartier green. A sautéed kale would have been awesome! Maybe with a bit of a kick from some red pepper flakes or infused chili oil. What is your favorite way to have beans in a salad?

#86: A lunch fit for a proper Texas rancher

a fistful of arugula
long drizzle Brianna’s Real French Vinaigrette
1/2 cup [homemade] Charra Beans (recipe source here!)
1 egg + pan lube
1 strip of bacon; crumbled
sriracha to taste

  • Toss your lettuce in the dressing. Make a ring of beans around your plate (kind of a bowl) and then fill the center with your greens. Sprinkle on bacon. Fry egg to your liking and place on top. Sprinkle with Sriracha (or drown it if you like!)
