Cucumber, Shallot, & Red Pepper

People, this was another good one. Light on the greens, but heavy on a lovely cucumber I scored and loaded with herbs.

For dressing this features one of my go-to Asian-y concoctions—try it on slaws! That’s an all time favorite of mine at summer bar-b-ques.

This combo travels well so I am including it in the to-go category. When you are packing things up in the morning or the night before, just toss all the toppings together with the herbs. Add in the greens when you are ready to nosh.

Ooonlyy thing I might change is I feel it needs marinated tofu…. Right? What do you think?

#84: Sesame Salad Goodness

a fistful of arugula
1/2 large English cucumber; thinly sliced and cut into half moons (save the rest for tomorrow!)
big pinch cilantro leaves; roughly chopped (I actually use kitchen shears)
a long drizzle Asian-y Sesame Dressing
1/2 small red chili pepper (a sweet Italian one shown here); thinly sliced
1 small shallot; thinly sliced
small handful roasted peanuts
a sprinkle of sesame seeds

  • Toss all the green things (arugula, cukes, cilantro) in dressing then pile on plate. Arrange chili, shallot, and peanuts on top. Sprinkle with sesame seeds! Yummmm…
