#61: Fridge Raid—Mama’s House Edition

My mom always has a fridge full of goodies. Depending on the time of year, a garden too! She pickled those beets herself and the green bits on top are wild chives that “volunteered” to be a part of her garden. She turned my on to my go-to dressing Brianna’s Real French Vinaigrette so that’s here too. Cottage cheese, blah blah. Yum.

 

a fistful of spinach
a long drizzle of Brianna’s Real French Vinaigrette
1/2 cup or so cottage cheese
1 pickled beet, sliced
4–7 strawberries, hulled & halved
1 green onion (or small bunch of domestic herb chives)

  • Toss greens in dressing and move to plate. Scoop on cottage cheese. Top with beets, strawberries, and chives. Salt and pepper if you fancy.
