Chickpeas, Sprouts, & Artichoke Hearts


#64: Sprouted in Texas

Wheatsville Coop always has a great selection of sprouts and the only place I can still find alfalfa sprouts (local Texas to boot!) Has anyone out there done their own sprouting for salad purposes? I really want to try it.


a fistful of arugula
long drizzle of Brianna’s Real French Vinaigrette
1/2 cup garbanzo beans
a big pinch of sprouts (alfalfa shown here)
3–5 marinated artichoke hearts, roughly chopped

  • Toss greens in dressing and move to plate. Top with layers of sprouts, garbanzo beans, and artichoke hearts. Extra drizzle dressing on top if it needs it!
