#44: Leaving the Nest

This has to be my favorite so far—and it was totally unplanned! I had a leftover half of cabbage in the fridge that was just begging to be a bowl. Once I kept putting more goodies in it, it was so nest like it would have been weird not to put an egg on it! At the end, this actually turned out like a cabbage pizza of sorts—I cut the whole thing in to six pieces and scooped it up by the slice.

1/2 cabbage
a small handful of arugula
1/2 cup black beans
1/2 lime
a long drizzle of sriracha
1 hard boiled egg (sub avocado for vegan version!)

  • Remove the center, dense core of the cabbage (and reserve for another salad). Fill the “bowl” you have created with a bed of lettuce and then beans. Squeeze lime and zigzag sriracha over everything. Place hard boiled egg on top!
