Black Beans, Red Onions, & Hummus

#45: No dressing needed

a fistful of arugula
1 cup black beans
1 tiny red boiler onion (or a 1/2″ sliver a regular sized one)
a big, heaping dollop of hummus
1/2 of a lime; cut in two

  • Pile on greens and then the black beans. Sprinkle on red onions and one wedge of lime over everything. Add the dollop of hummus. Squeeze final 1/4 of lime over bite as you eat them. Yum!
